This is made with rye that is locally and sustainably sourced in the Midwestern US, distilled in such a way that favours lightness and freshness. Mellow, with pretty maple notes, candy corn and oh, there it is, the spicy spicy rye! Caraway, cinnamon and black pepper. Perfect cocktail rye. Founded in 2008 by husband-and-wife team, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, KOVAL was the first, well, the first legal distillery to open in Chicago since the 1800’s. Sonat and Robert had established careers in government and academia, but wanted to indulge Robert’s family, who had a rich distilling heritage. They are fastidious in their sourcing of grain,supporting local farmers who farm organically.
