Personalised Giant Steps Sexton Vineyard Chardonnay 2018 13% 750ml
Hand picked, all fruit is chilled overnight to 12 deg C Indigenous yeast. Fermented in small oak fermenters. The 115 was fermented as 100% whole bunch, while the MV6 was destemmed, soaked cold for 5 days, then allowed to warm gently into a wild ferment. All parcels were matured in French oak – 25% new, 75% older – for 8 months in 225L barriques. Racked to blend, no fining, no filtration. Bottled by gravity.
Expert Review:
Houn Hookie- 95 points- Light red colour with the merest tinge of purple. The bouquet is lightly spicy, meaty and somewhat charcuterie-like, bresaola rather than prosciutto. The wine has weight and grip beyond what its colour implies. A very smart pinot, with a fruit-sweet core as well as charm and complexity. Delicious.

Focused intently upon reflecting the individual and unique characteristics of each single vineyard, Giant Steps adopts a minimalist approach to winemaking including, whenever possible, vinification using indigenous yeasts and gravity flow transfers.
