Personalised Giant Steps Applejack Vineyard Chardonnay 2018 13% 750ml
Hand picked and whole bunch pressed without additions. Course settled to 500L French puncheons. Indigenous fermentation. Batonnage for the first month, then topped and let rest (maturing) for a further 8 months on lees. New and used tight grain French oak – 20% new, 80% older. Course filtration only. Bottled by gravity.

James Halliday- 96 points, Hand-picked, whole-bunch pressed, no additions, wild-fermented in French puncheons (20% new), matured for 8 months with stirring for the first month. A spotless bouquet and an elegant palate of great length. Stone fruits and melon are threaded through a faint gauze of acidity, oak barely seen. This is an exercise in balance, and the certainty of future greatness.

Specialising in Chardonnay and Pinot Noir, Giant Steps explore site, micro climatic and clonal differences between several specialized vineyards in the Yarra Valley including their own multi-clonal vineyard and the highly regarded Tarraford vineyard. Focused intently upon reflecting the individual and unique characteristics of each single vineyard, Giant Steps adopts a minimalist approach to winemaking including, whenever possible, vinification using indigenous yeasts and gravity flow transfers.
