Personalised Giant Steps Applejack Pinot Noir 2020 13.5% 1.5L

Hand picked, all fruit is chilled overnight to 12 degrees Celsius. Indigenous yeast fermentation. Fermented in small oak fermenters and stainless steel open vats. The MV6 parcels were fermented as whole bunches, while the Pommard, Abel and D clones were destemmed, soaked cold for 5 days, then allowed to warm gently into a wild ferment. All parcels were matured in French oak – 25% new, 75% older – for 8 months in 225L barriques, Taransaud, D&J and Vicard. Racked to blend, no fining, no filtration. Bottled by gravity.

Expert Review:
James Halliday- 98 points- The clarity, the purity, the elegance and the perfume that the Upper Yarra Valley Applejack Vineyard brings to the party is immediately recognisable. Equally insistent is the sheer power of the red fruits and spices hidden by the light colour of the cloak.

Yarra Valley based vigneron, Phil Sexton lives with his family in the middle of their 32 hectare vineyard established on the high north face of the Warramate Ranges in the dress circle of the Yarra Valley. Specialising in Chardonnay and Pinot Noir, Giant Steps explore site, micro climatic and clonal differences between several specialized vineyards in the Yarra Valley including their own multi-clonal vineyard and the highly regarded Tarraford vineyard. Focused intently upon reflecting the individual and unique characteristics of each single vineyard, Giant Steps adopts a minimalist approach to winemaking including, whenever possible, vinification using indigenous yeasts and gravity flow transfers.
