Fruit was hand-harvested (at 13.5 Baume) into 2-tonne bins and transported to Winery. The fruit was crushed with open rollers (to ensure maximum % of whole berries) and allowed to cold soak in tank for 3 days at 8 degrees. Must was allowed to warm naturally and while ferment began spontaneously. Gently maceration of skins throughout ferment to avoid excessive extraction and ensuring tannins remained supple and elegant, post-fermentation, the must is pressed and wine is transferred to oak (80%) French new, 1–3-year-old and 20% American 1-2 years old.
