The grapes were destemmed and cold soaked for 4 days, and then fermented in 7 tonne fermenters over 1 week with pumping over twice a day. The wine was pressed and put to 100% French oak barriques and puncheons to undergo maturation for 10 months. Excellent December rainfall meant that the vines were in healthy condition with plenty of foliage. A cooler and drier than average January delivered ideal ripening conditions. Good vineyard management resulted in grapes showing flavours of great freshness and intensity.
