Being on the higher slopes, topsoil is thin and root systems have established themselves in shallow gravelly loams above a tough rocky clay base. Bunch yields set naturally low in this environment, resulting in intensely flavoured fruit with high skin to juice ratio. The predominant clones are Gingin and Mendoza which produce hens and chickens (large and small grapes on the same bunch), which results in high white tannin and phenolic content to balance the citrus flavours. Fruit is from the Applejack Vineyard, just \"down the hill\" from Wombat Creek Vineyard (actually about a 10-minute drive up a winding, hilly road, taking you up about 100 meters in elevation). This is taut, linear and shaped by firm yet supple phenolics that show an array of characters on the mid-palate and beyond: white miso, red apple skins, cheesecloth and musk. This, again, like the other Chardonnays, is salty and littered with preserved lemon, crushed nuts and orchard fruit. After fermentation had begun, daily delestage by gravity was performed for cap management.
